Curried Talapia with Mango Salsa

Here's a recipe from my friend, Karin. Anything with mango salsa sounds divine to me!

Preheat oven to 350 F.
4 Pieces of Fresh or thawed tilapia (or more if you need for more people)
1 cup of mango salsa(more if needed)
1 T curry powder(add a T if you use more fish)
1 1/2 tsp cumin
2 inches of garlic paste (teaspoon chopped)
salt & pepper to taste
2 T olive oil
lemon juice


For the tilapia rub, mix together in a small bowl. 1 tablespoon of olive oil, curry powder and garlic, cumin, and salt & pepper..add a little of 5 spice seasoning if you have it, Rub this mixture onto both sides of the fish fillets. 
I usually drizzle the fillets with some lemon juice before I apply the rub. Personal choice.
Line your pan with foil so that you can create a pouch for the fish. Place the fish in the pan side by side, squeeze some lemon juice and spoon the mango salsa over the fillets so the are covered but not drowning.
Fold the foil to creat a pouch and bake for about15-20 min.. depends on how thick.
